Cauliflower KuKu

 

Ingredients

1 small head cauliflower

1 medium onion, peeled and crushed

2 cloves garlic, peeled and crushed

1/4 cup butter, melted and divided

4 eggs

1/4 tsp black pepper

1/2 tsp baking powder


Method

Preheat oven to 350 degrees F.

Wash the cauliflower and break into florets. Steam for 20 minutes or until soft. Drain and mash, set aside. Spray a saute pan will non-stick spray. Brown the onion and garlic and set aside. Break eggs into a bowl. Add pepper and baking powder. Beat thoroughly with a fork.

Place 1/8 cup butter into oven proof pan and melt. Add the cauliflower mixture to the eggs. Remove the pan from the oven and fill with the egg mixture. Bake for 30 minutes uncovered. Remove from oven and pour 1/8 cup melted butter over mixture. Bake for an additional 20-30 minutes until golden.


Plating

You can either serve it in the dish it is baked in, or invert and unmold. This dish may be served hot or cold with yogurt and bread.
